A BIG announcement from our founder!

A MESSAGE FROM OUR FOUNDER AND CEO:                                                                                           For over 30 years, I have worked along side my family handcrafting fresh chocolates in St. Louis, Missouri.  Today, I am proud to announce our largest expansion in our company’s history.  Later this year, we will open a new State-Of-The Art 30,000 sq ft. chocolate factory in the heart of St. Louis, Missouri.  It will serve as our new company headquarters, candy kitchen and distribution center for our retail and gourmet wholesale division.  
Thank you for your support over the years and I welcome you to come visit us at our new chocolate factory this summer.  Stay tuned for our opening date and many surprises to come!

Handcrafting Peppermint Bark

Peppermint BarkOne of our favorite holiday items to make is our refreshing Peppermint Bark!  Did you know that our Peppermint Bark is naturally infused with Peppermint Oil and All Natural Candy Cane?  Here is an image of our Peppermint Bark cooling on a marble slab before it is cut by hand and packaged fresh.  Our Peppermint Bark has a bottom of our All-Natural Dark Chocolate and a top of our extra WHITE white chocolate.  Once we have our perfect chocolate mix, we liberally sprinkle the candy cane on top!  YUM!

Making Molasses Puffs

Making Molasses Puff Have you ever taken a bite of our signature Molasses Puffs and wondered how they are created?  Here is a FIRST EVER sneak peak of our Molasses Puffs before they are covered in our award-winning milk and dark chocolate.  Our candy makers just finished cooking a batch of these delicious puffs in a copper kettle and poured it directly on our marble slab.  The big puff will cool down over night before it gets cut up into smaller pieces and covered in chocolate. YUM!

What are Dreams?

Dreams are a new chocolate creation created by our candy makers.  We created the Dreams line to replace “creams”.  Over the years, we found that creams were the chocolates left inside a box of chocolates – nobody wanted to eat them.  Creams were round, thin on chocolate and artificially flavored.

 

Candy Maker Cooking Fondant STEP 1:
The first step was to change the consistency of a Dream.  We started with a French fondant, all natural and smooth.  Here is an image of a candy maker stirring a batch of fondant in a copper kettle.
STEP 2:
The second step involves the flavoring.  With Dreams – we use only all natural REAL fruit, cooked into a puree.  Here is an image of a candy maker cooking down fresh strawberries into a natural puree.

The third step involves the infusion of the natural puree with the French fondant.  The Dreams center slowly cooks for several hours in our candy kitchen.  This is the secret process!
STEP 4:
The fourth step in creating a Dream is starch casting.  Starch casting is a candy making technique that dates back centuries, all done by hand.  A candy maker uses a funnel to slowly cast the warm Dream center into soft starch impressions.  All Dreams are cast into a oval or “football” shape.

 Fresh Fruit Dreams STEP 5:
In this final step, the Dreams are enrobed (or covered) in all natural milk or dark chocolate.  A skilled candy maker ‘stripes’ (or decorates) each piece by hand giving each Dream is identity.  A ‘B’ for Blackberry, ‘C’ for Coconut, ‘V’ for French Vanilla, ‘S’ for Strawberry, ‘M’ for Mango, ‘P’ for Pomegranate and so on.
